The region is considered the "heart" of France's pet-nat wines, the oldest method of sparkling wine production in the world. Damien and Coralie "fell in love" with this style and have been producing this stunning rosé sparkler, with only the one fermentation, for over a decade. The pet-nat trend is significant, a return to the roots often associated with the natural winemaking movement. The style is "sweeping" but these are often wines full of "craziness", funky character and specificity. Rosa Rosé Rosam follows the philosophy of minimal intervention, with indigenous yeasts and no additions beyond minimal sulfites, but at the same time has an extremely pure and enjoyable character. It is classified as a Vin de France, like most of these wines. The grapes are taken directly to the press whole, the "colored" juice will be left for 24-48 hours in tank to clarify and then transferred to another tank to begin fermentation with native yeasts. Before fermentation is complete, the wine will be transferred to bottles where the fermentation will be completed creating in-bottle foaming.
