The "vineyard-sensitive" Pinot Gris is the first variety to be drilled in Reuilly, giving a truly unique wine for the Loire. The reddish-red variety that has associated its name with great whites in Alsace is grown here to give beautiful, onion-skin coloured, rosé wines that accurately capture the freshness of the climate from which they come. Les Fossiles is the second of the winery's rosé Pinot Gris and is differentiated in terms of the vineyard which in this case comes from a terroir rich in fossil and clay-calcareous soils. The cultivation of the vineyard is biodynamic and fermentation is carried out with indigenous yeasts. Next to the elegantly delicate fruit there is a subtle salty taste and a nice spiciness of Asian spices such as ginger.

“Les Fossiles” is vinified in stainless-steel vats and left on fine lees for six months, acquiring a nicely oily body. But acidity eventually “stimulates” the palate, penetrating the fat and combining with fragrant spices, ripe pear and white-fleshed peach. Spicy and mineral on the finish, this is a wine with an extremely versatile style. It can easily be enjoyed as an aperitif or with charcuterie, the intensity of asparagus and lightly spiced Asian cuisine. It has more energy than the fruitier, sweeter “Les Chatillons Rose” from the same producer, and is a great “esprit” from start to finish.
