Wild Soul is produced from a blend of fruit from Julien Sunier's cru (when the year allows) and the Beaujolais Villages appellation of origin and is the negoce version of the producer's wines. Even the purchased fruit is organically grown and for this wine he seeks purity in the fruit through carbonic maceration and without any extraction of the juice with the skins as he may do (towards the end of fermentations) in his wines from the Beaujolais cru. The result is highly charming, with crisp red fruit, perfectly light with unadulterated character and excellent freshness. A fantastic approach to the aromatic and direct dimension of Gamay Noir from the region's rocky granite soils, in a wine that doesn't seek the depth and complexity of the producer's cru.

The wine is vinified by means of carbonic maceration and with indigenous yeasts, without the addition of sulphites during vinification and maturation of the wine. A small percentage of sulphites is added only before the wine is bottled. The philosophy of winemaking with minimal intervention, just as it does with its fantastic cru, is followed in Wild Soul. The wine is bottled unfiltered after being left in a large 3,000 litre oval tank and in horizontal stainless steel tanks with fine wine lees. The aim is to "trap" the purity of the fruit and avoid any contact with oxygen, so that the wine can bring out its perfectly aromatic, fruity and floral character in its lighter, airier version.
