The Marche region in central Italy is a stronghold of organic farming in Italy and the Marchigianni (the inhabitants of the Marche) are deeply attached to their native varieties. Among them, Pecorino is the flag of the region and it is a grape that was recently rescued, shortly before its total extinction. Its name comes from pecora, the Italian word for sheep, and relates to the fact that the region was historically known for its livestock farming. Consider that Aurora Winery's excellent Fiobio is a rich white wine, with unexpectedly high acidity, herbal character and citrus blending with mineral and honeyed notes.

The Marchigianni are proud of Pecorino, a grape that has in recent years associated its name with the southernmost part of the Marche, where it is believed to have originated. Fiobbo Pecorino comes from organically and biodynamically grown vineyards and is produced with gentle interventions in the winery. A percentage of the wine has passed through oak barrels (30%), adding extra complexity next to the beautiful sage-like botanical character of the variety. The wine is beautifully structured, mineral with spicy notes and high acidity which is tempered by the medium-full body. Sulfites are low and fermentation is spontaneous.
