Galeyrand's wines always manage to exceed the quality expectations one would have based on the appellations of origin on the label. The great producer moves more on the "fringe", where the "nobles" of the region have not looked. And his dedication to the promotion of Aligoté, just as his good friend Sylvain Pataille does, proves the point. Bringing the variety back into the limelight is a "victory" for the non-"aristocratic" side of Burgundy, whose more "fancy" Chardonnays often even their own producers can't afford. But it is also an important victory against a tradition that has been almost 'outlawed' for a century. Of the different Aligoté labels produced by Galeyrand, Poirossot comes from a vineyard in Rully in the Cote Chalonnaise on limestone soils. It's like "squeezing" the stone and drinking it in your glass. Smoky, mineral, sharp, crystalline, lemony, with acidity that stimulates the palate and great depth of flavour.

Jérôme is one of the first producers in Burgundy to insist on the dynamic of the "humble" Aligoté and one of the founders of the "Les Aligoteurs association". The vineyard, although located in Rully AC, cannot carry the Rully designation on the label since in whites only Chardonnay can get the appellation of origin. The grape is pressed in an old press which extracts more flavour and structure to the wine. No sulphite is added during the winemaking process. The fermentation is spontaneous and the maturation lasts 12 months and takes place in old oak barrels and then further for about 2 months in tank. The wine is not subjected to clarification and only a light filtering when and if necessary. Sulphites are added only before bottling. (50-55 ppm total).
