    Stephane Tissot produces over 30 different cuvees every year - everything from exquisite bubbles to enhanced Macvin sweets. In this vast collection it's quite possible that his great Cremant's are just an afterthought. And yet the Extra Brut Cremant he produces displays a depth that you will rarely find even in fine champagnes. Dry, slightly salty with a pleasant astringency on the palate this is a sparkling with tremendous interest and personality. It is certainly far from the style of a champagne. It's richer and pleasingly complex and has something reminiscent of the oxidative character of the region's famous Savagnin although Savagnin is not involved in the blend at all.

    An incredible interaction between the dry, austere and mineral character of the wine with a rich oxidative sensation on the palate. Dry, floral with aromas of honey, quince and baked apple while the palate is generous with smoky, toasty, buttery elements and very pretty complexity and excellent bubbles. Based primarily on Chardonnay and secondarily on Pinot Noir, with hints of Poulsard and Trousseau this is an incredible sparkling wine full of energy and for those who love fishier than bone. In total it was left on the lees for around 18 months and is perfectly dry in style.
