Chateau Chalon an entire Jura appellation of origin dedicated exclusively to Savagnin and the region's stunning yellow wines (Vin Jaune). For six years and three months the wines are legally matured under the thin layer of sous voile that develops in the partially filled old barrels, giving the world one of the rarest, most complex and distinctive wines in terms of flavours and aromas. The deliberate oxidation is a catalyst for the character of the wine, leading to penetrating and highly complex aromas with very intense aromas of nuts, spices, earth and salt. Stephane Tissot's Chateau Chalon comes from a vineyard in the north of the zone on clay soils and is the apotheosis of the style - a wine almost devoid of fruit characteristics but with an intense dry fruit character of almond, nuts, deliberate oxidation and the characteristic salinity or saltiness reminiscent of Fino Sherry but with a concomitantly heightened level of complexity.

Piercing tensions with beautiful oxidative hints supported by citrus peels and candied lemon. Give it time to open up and it's a party of aromas with saffron and curry, tobacco leaf, nuts like walnut and toasted almond, combined with earthy truffle notes. Mouth umami-driven on the full, minerality reminiscent of peat and shellfish, intense nut flavors and an almost salty, intensely spicy finish that is unforgettable. A sublime yellow wine from Tissot and Jura's most famous appellation of origin for this style. Explosively powerful with doses of elegance at the same time. The 62cl bottle in which all Vin Jaune is obligatorily bottled is called a clavelin and represents the percentage of a litre of wine remaining after evaporation over the years in barrel. The percentage of wine lost during the wine's multi-year maturation is estimated to be around 40% of the original quantity.
