Sixteen endemic varieties have been recorded to date in the Cypriot vineyard and who knows what else this unprocessed terroir with the uniqueness of the autochthonous vines may hide. Vouni Panagia is the only Cypriot winery that cultivates exclusively indigenous Cypriot varieties. And if one asks which one stands out among them, the answer is rather difficult. It's not just their rarity but the fact that each of them can be completely unique. Spourtiko, for example, with its delicate fragile skin (Spurto means bursting in Cypriot) is almost always the variety that gives those wines with the lowest alcohol of all, while citrus, pear and herbal notes complement the mineral limestone notes that characterize it. Fantastic style considering where Cyprus is located in latitude on the map.

Delicate, fragile, difficult to cultivate since if it becomes "stubborn" it can get stuck at 9% potential alcoholic strength and is difficult to go higher. Not many leaves you see and it sometimes has a hard time feeding the fruit. So it is delicate and elegant as a wine, has a beautiful aromatic character with pear, apple, lemon and herbal and floral notes and a lovely freshness and mineral finish on the palate. It makes up just under 0.2% of the Cypriot vineyard and Andreas Kyriakides rescued the variety through complex old varietal vineyards before starting to vinify it separately a decade ago. The wine is vinified in anodised tanks, with indigenous yeasts and remains in contact with the lees for 8 months. I don't know what other story is needed to taste something so rare, special, unique, unique and full of whimsy.
