Sous la Tour comes from limestone soils on the eastern and western slopes of a hill in the commune of Arbois. Sous la Tour is elegant and austere like many quality Burgundies on the market, but at the same time carries a deep fruity dimension and tannic intensity that make it truly enjoyable. It belongs to that unique Pinot Noir genre of mild natural vinification, with accentuated aromas, earthy notes and finesse, characteristics that seal the top expressions of this vulnerable variety.

Use of whole bunches in fermentation which lasts a total of five weeks in oak winemakers and then follows maturation in 600 lt oak barrels for one year at a rate of 15% new barrel. It has that wonderful, spicy fruity texture that whole bunch vinification imparts. The palate is classically elegant and lively with mineral hints. Spices and minty freshness are accompanied by a tannic structure that will be able to stand up to whatever fat you add next to it in food. Able to age beautifully in the bottle developing the wonderfully complex, earthy, mushroomy character of the varietal.
