Evriviadis Slavos produces two different versions of dry Mavrodaphne. Think of the Bio Mavrodaphne from his own vineyards as a turbo-charged, high-horsepower Golf GTI while his classic Mavrodaphne is a Golf in a more "quiet" version. Regardless of version, of course, the Golf is always a Golf and the quality is top notch. So for the classic Mavrodaphne, excellent quality, low yielding, Mavrodaphne grapes are used from cooperating producers in various parts of Paliki, within the variety zone. A wine defined by the combination of freshness and red fruit, with very elegant tannins and a more rustic -complex- animal dimension on the finish.

The care and the philosophy in the winery does not change, since for the classic Mavrodaphne, which does not carry the organic certification, Slavos chooses gentle natural vinification of the grapes. The wine will mature for twelve months in 500lt barrels, exuding a pleasant herbal sensation, with fresher, red fruit than the organic Mavrodaphne and almost "invisible" barrel. Animal, smoky notes come to complement the aromas leading to a very pleasant palate, with soft, refined, tannins. Despite its young age, it drinks very comfortably from the start as it doesn't have the almost frightening power and concentration of organic Blackthorn but a nice overall balance.
