"La Fue et la Glace" is a rosé sparkling pet-nat born in place of their iconic sparkling "Le Bulle" in a difficult year. It's a blend of organic Gamay (purchased from the south of Beaujolais) and Chardonnay from the estate and produced using the ancenstrale method. The blend is not that special considering the Maconnais region is the "melting point" between the two varieties. This is a delightful sparkling wine that explodes with red fruit and citrus aromas. The palate is "nervous" full of freshness and makes you want to drink more. Just a hint of residual sugars and very low sulphites, in a wine that has all the characteristic "craziness" of this style that has become extremely popular worldwide, especially among low-intervention wine circles.

The wine is bottled as Vin de France with a grape that is about 80% Gamay with only 20% Chardonnay. The wine completes its vinification in bottle where it acquires its sparkle and is left for about 4 months in contact with the lees. With only 4gr/l of residual sugars, extremely refreshing acidity and very low sulphites, it is a perfectly "playful" wine with a thirst quenching character.
