The Tatsis brothers' rosé Negoska tends to be far from the rosé archetype of Provence wines. But it is a reminder of what a gastronomic rosé wine should actually be like. Based on the local Negoska with gentle natural vinification and low sulfites, it has much more depth of color than the fashionable dictates and a mild tannic character that brings it closer to the red wine philosophy. From the family's biodynamic vineyards on the slopes of Goumenissa, the rosé Negoska stays in contact with the skins for about eighteen to twenty-four hours and then ferments at low temperatures with indigenous yeasts. It is not filtered and the sulphur content is low. The nose has a combination of ripe fruit, poppy seeds and peppery spices. And while it is relatively restrained ,it has a structure that gives the wine an "underground" push in the mouth. A very interesting, distinctive rosé of mild natural vinification with a clear gastronomic orientation.
