The combination of Burgundian fermentation and barrel maturation techniques with stirring of the lees for four months and the low yields from the rugged terraces of the Armi vineyard offer a "space" version of this very rare variety. If you love your Chardonnays, the Armi Thrush will take nothing away from the usual richness and enjoyment, but laced with much more interest and an underlying wild herbal feel. Thrapsathiri is for all the Indiana Jones of wine who relentlessly pursue adventure in discovering another hidden treasure of the Cretan vineyard and the Lyrarakis family. The vinification starts with the maceration of the grapes at low temperatures for twelve hours while the maturation takes place in French and American barrels of two and three years. The wine will remain in the barrels for four months in full contact with the fine lees. Tropical fruit on the nose, combined with more herbal notes and beautifully integrated creamy barrel. Gorgeous texture on the palate, depth and intensity with an excellent sense of acidity. Like the Vidiano, it has breadth and a roundness without the barrel overpowering at any point on the palate. Powerful, intense and with a complex evolving finish. It will certainly age, always in the right conditions, for at least five years.
