From the oldest Pinot Noir vines in the lieux-dits of Clos du Roy, Clémengeot and Les Ouzeloy, planted between 1930 and 1945, Sylvain Pataille's masterful L' Ancestrale is a wine that straddles the line between concentration and finesse. After 24 months in barrel, it initially reveals a more oxidative dimension, which over time gives way to a dense nose with aromas of plum, cherry, smoked meat and earthy, mineral notes. The fruit is surprisingly ripe and concentrated without losing its charm, and the tannins have a different level of elegance that you rarely have the chance to encounter. Mild and medium at first, with no exaltations, they gradually develop their awesome length, length and intensity over time on the palate.

The care of the old stumps is proverbial, they are ploughed only with the help of a horse, they are not "trimmed" in the summer but the result in the quality of the fruit is stunning. The cultivation of the vineyards is biodynamic, the fermentation is spontaneous in oak barrels where the wine will remain for 24 months before being bottled with minimal sulphites. Multi-layered aromatically, with absolute concentration on the fruit, which is built around a robust tannic framework of tannins, the texture of which is so silky that despite their high intensity they literally caress the mouth. Long aging will only benefit it, helping it develop an almost orgasmic complexity on both the nose and palate at the same time.
