Rosé Fleur de Pinot is based on very old Pinot Noir vines with a percentage of about 5% of Pinot Beurot (Pinot Gris). Sylvain considers the fruit from the three old vineyards to be the best overall from the estate. About half of the grapes are pressed directly with the whole clusters, while the remaining half undergoes 36-48 hours of juice maceration with the skins. Fermentation is spontaneous and the wine will age for two years in old oak barrels, with little sulphites added only at bottling. The aim is to produce an exceptional wine from a great terroir, old vines and prolonged ageing. It has the stunning salinity and reductive, almost smoky minerality found in Sylvain whites, with tremendous concentration on the fruit and freshness on the palate from the acidity levels. The barrel builds levels of complexity in the wine without being noticeable on the palate, and the finish is spicy, almost "biting", and has incredible length. It will develop more and more aromatically and flavourfully with time to reach its peak within the next decade.
