    We could describe it as a mini Amarone. But essentially, the Valpolicella Ripasso Sausto of Monte Dall'Ora offers a panoramic -360o - range of the region. A style of wine that combines the richness and complexity of Amarone with the freshness and directness of Valpolicella. The process calls for a portion of fresh Valpolicella Classico to pass in February on the skins of the estate's Recioto, starting a second fermentation that raises tensions, flavors, alcohol and gives more volume. Juicy and ripe with very nice freshness and good concentration, Ripasso is the wine that brings the perfect balance between the two extremes called simple Valpolicella and Amarone.

Cherries infused with alcohol, plum and raisins along with notes of mint and floral notes. Ripe yet fresh on the palate with very good tensions and robust, elegant tannins. It is no coincidence that the Ripasso style is the most commercially successful style among the wines of the Valpolicella region. Sausto is one of the most refined Ripasso of the entire zone, a wine of unsurpassed pleasure that "bridges" richness with elegance.
