This particular Haute Densité, high density planting piece, is a small part of the 1er Cru vineyard "Derriere Chez Edouard" at its steepest and steepest point. So steep and densely planted that everything is done by hand. Scary when you consider the work required, as it's not just planting densities but Olivier applies all his vine-related "craziness" here. It is no coincidence that it is one of the wines that has put St-Aubin on the map as a stunning reference source for what new Burgundy is all about. But its fame is matched by a correspondingly stunning, flavourful result. The wine after 18 months in barrel, a maximum of 5% new depending on the year, perfectly mirrors the power of the poor, stony, limestone terroir. Stone-like minerality, fine green citrus and yellow stone fruit, with surprising detail in how straightforward, vibrant and concentrated the fruit looks while still young.
