"La Princée" is a blend of different vineyards on the western slope of the commune of St Aubin and a - surprisingly - direct introduction to Olivier Lamy's style. Austere, with energy and freshness that pervades you as if it were Chablis from the northernmost part of Burgundy. Its freshness takes you to the air of St-Aubin which seems more fresh and chilled than the air of the neighbouring villages of Chassagne and Puligny. The tremendous, mineral character makes you crave and focus on the clarity of the fruit. A crystal clear reflection of citrus, zest and aromatic peach. Hard to tame energy and acidity of the wine that cut through like a razor blade even in the now more mature vintages.

The vines are scattered throughout the commune of St-Aubin, on the western slopes of the region and the fruit for 'La Princée' is harvested from many different places. The vines are planted between 1985 and 2000 and are cultivated using organic methods. The wine is matured in 300 and 600lt barrels for a year, followed by 6-12 months in bottle before being released full of energy and character to the market. Behind its apparent austerity and "wildness" there is a lot of substance, attractive fruit, and excellent ageing potential over time.
