Around the hamlet of Taganana that lends its name to this "jewel" of the Envinate one will find some of the most isolated, authentic and ancient vineyards of Tenerife. Here, in the steep inhospitable topography of the region, tourism has not caught up with the same pace and one will be able to find ancient small autochthonous vineyards in steep places which are extremely difficult to access. The red Taganan is produced from grapes from many small vineyards in the region with an altitude of 200-400m and an age of between 50 and 150 years. Vinification varies for each vineyard depending on the characteristics of the grape and 50-70% whole bunch to be included in the tank. Everything is done without intervention, fermentation is spontaneous and each vineyard is fermented in open oak tanks of 1,000lt. The wine will be matured in neutral 228lt barrels for 12 months and bottled with minimal sulphites at this point.
