    The return of Cyclops is in the form of a rosé wine and from 100% Mandilaria. Another innovative approach by Nicola and Marie Bourget to the Aegean grape that in this version is transformed into a delicious, easy-drinking, naturally sparkling rosé wine. The Pet-Nat trend, or rather its return to prominence since it is the oldest way of producing sparkling wines, is well underway and the whole essence of a pet-nat is directness, freshness and sheer pleasure, something that Cyclops Rose brings to the superlative degree. Fresh, fruity, with a fine and elegant natural effervescence, a dry sparkling pet-nat produced with indigenous yeasts and without any kind of intervention. Totally fun and trendy, the definition of easy-drinking wine.

    The wine is fermented with indigenous yeasts and before the fermentation is completed it is bottled (in September) to complete its fermentation in the bottle. The wine thus acquires its natural sparkle and then in February the sediment is removed from the bottle. A rosé sparkling wine, with intense fruit, reminiscent of raspberry and cherry, plenty of freshness and a soft pleasant bitterness on the finish that gives it an extra dimension. It is very well drunk chilled and does not need anything to accompany it. A brilliant approach to Mandilaria that transforms the grape into an extremely direct and enjoyable wine.
