The area around the Layon, a small tributary of the Loire, was and is traditionally known for its stunningly sweet wines of noble rot If the wines of the neighbouring (opposite bank) of the Loire Savennieres tended to be almost always dry, here they were almost inevitably sweet, due to the extra moisture of the Layon which helped the botrytis to grow. Combined with the shallow, shaley soils that Chenin loves, the result is stunning. Vanessa produces the sweet Coteaux du Layon 1er Cru Chaume only in years that are conducive to botrytis growth and is a seminar in balance. Concentrated without being heavy at all, with "electric" acidity running through the sweetness, aromas of apricot, honey and candied pineapple on a truly magically persistent finish.

Manual harvesting with multiple passes through the vineyard to collect the botrytised grapes and then slow fermentation with the native yeasts. The wine is matured for at least a year in oak barrels. Its sweetness is measured and is superbly balanced by the high acidity of the wine. So despite the concentration and sweetness, this balance of acidity adds "air" and a light dimension to the palate, making it enjoyable. Enjoy it on its own, alongside a mature "blue" cheese or with white fruit desserts.
