The Pais variety is part of the magic of the Itata region in Chile. It is the first variety planted by the immigrants who arrived in the country and today one can find dry vines in a cup, whose age is more than 100-140 years old. If the name Pais means nothing to you, it is the same variety known as Listan Prieto in Tenerife and Criolla Chica in Argentina and has largely been eliminated from the vineyards of Spain and also California, to which it had also migrated with the settlers. The style of the wines may remind some of the Trousseau of the Jura. It is light in colour, more earthy in aromas, ethereal and fresh in texture. Vinista is a unique wine, in a country that has become identified with superficiality and instead promotes elegance, finesse and energetic character, but without lacking complexity or structure in the mouth. And Vinista's tannins bite unexpectedly.

Along with Imaginador from the Cinsault variety, Vinista is the second of Pedro Parra's village (by Burgundy standards) wines, which means that the fruit comes from different vineyards. And even though Pedro was for many years a super-fan of the Cinsault varietal the Pais has slowly managed to capture his interest much more. It is perhaps this relevance to other regions of the world that are working to bring back forgotten varieties and a heritage through the lens of old vineyards, something Itata has in abundance with Pais that spurred him on. It's not just old vines but traditional winemaking styles that make wines like Vinista stand out from the copy-paste of wines from the world's vineyards. Vinification with 50% whole bunches, in large foudres and stainless steel tanks, higher temperatures (22-24oC) and a wine definition of drinkability.
