Traditional in the best sense of the term, Chateau Falfas is one of the historic Bordeaux wineries from the not-so-sung region of Côtes de Bourg, just across the Gironde, at about the height of the Margaux appellation. Véronique Cochran offers a tantalizing take on the Bordeaux region's past by stepping on biodynamic farming, manual harvesting, cold pre-fermentation maceration of the grapes, pressing in a vertical wooden press and little to no additions. "Les Demoiselles de Falfas" is the introduction to the estate's wines and comes from the youngest vines of the beautiful chateau, whose property covers 20 hectares of vineyards and 15 hectares of forest. A wine ideal for immediate drinking, light, fresh, built on a floral dimension (violets) and fresh fruit, crisp in texture and with delicate and soft tannins.

The Merlot's sweet and juicy fruit is in the foreground, an explosion of red summer fruit and flowers leading to a soft palate with lower tannin levels and excellent freshness. The blend steps on 75% Merlot with the rest being Cabernet Sauvignon. The wine has short extractions, fermented with indigenous yeasts and matured only in concrete tanks for about 6-8 months before being released to the market. A Bordeaux to be enjoyed on a daily basis and intended for immediate consumption.
