Aimilios Andrey searches for old vineyards in the hinterland of his hometown, Chania, which hide within them wine treasures of native Cretan varieties. The starting point of the Don-Kichotic approach are old autochthonous vineyards with Muscat of Spina, on the highlands of the White Mountains at altitudes exceeding 800m. These pieces of land produce a sensational Spinas Muscat, which goes beyond the idea of an aromatic white wine and is full of energy and vitality, with an almost salty mouthfeel. Granitic-slate soils and autochthonous perennial vineyards seem to work wonders in a wine that puts the variety in a different dimension and gives it an exceptional gastronomic identity and layered complexity.

Aori means "mountain" in the local dialect and this is the name chosen by Aimilios Andrey for his project, indicating the search and revival of mountain vineyards in the White Mountains of Chania. The Muscat Spinas he produces is vinified in anodised tanks using neutral cultured yeasts and the brief contact with the lees helps the wine to build complexity while maintaining its otherwise "airy" and cool mouthfeel. The salty mineral sensation that comes through on the finish is the imprint of the vineyard's granitic terroir. Although unmistakably Muscat in its aromas, it lacks the overly aromatic expression that usually characterizes the grapes of the Muscat family. That is why this is an incredibly enjoyable wine with much more interest than a single aromatic dimension.
