Another elaborate winemaking by the young producer that follows her totally non-intrusive philosophy and the absence of the use of advanced equipment in the production of her wines. 50% of the grapes are very lightly crushed followed by a short and gentle maceration for 4-5 days with the stems. Fermentation continues in plastic and fiberglass. The remaining 50% is extracted in a combination of crushed and de-stemmed fruit in alternating layers with whole bunches for 14 days. Finally everything is pressed together on the old wooden press before being transferred to the containers where they will be aged. The result, elegant, ethereal, with spicy characters and a slightly rustic mouthfeel.
