The relationship of the Tatsis brothers with nature is absolutely harmonious and healthy. The two never stop for a moment to observe and experiment, following a different path almost from the beginning. They belong to a generation of winemakers who, since the 1990s, started producing wines of mild interventions and biodynamic farming. Their approach to such a mainstream grape as Malagouzia is extremely interesting. The wine is aromatic but not colicky, ripe and fruity with a beautifully rich texture and tensions on the palate. A slight oxidative honeyed note and a vinous dimension accompanies the fruit giving it a very high degree of specificity compared to more fashionable approaches to the variety.

Before the alcoholic fermentation begins, a short period of contact with the skins for a few hours precedes the fermentation and then the wine is fermented with native yeasts at a controlled temperature. It will be worked with the lees for about a month and a half slightly increasing the complexity levels of the wine. On the nose, fruity aromas reminiscent of peach, bergamot and apple compote, on the palate beautiful oily flavours that blend with the relative freshness of the acidity and some dry and honeyed notes. Time will accentuate its oxidative dimension, caramelizing the fruit even more.
