Fermented with skins, Santameriana explores a more "stripped down" and less mainstream winemaking perspective that, although ancient, has returned to the forefront in recent years. The wine ferments spontaneously with indigenous yeasts for twenty days in clay amphorae with the skins on and without temperature control. Tasting orange Santameriana is an adventurous, unprecedented experience, completely different from the classic version and truly fascinating. The vinification intensifies both the depth of flavour and the wine's resistance to time, unfolding a light tannic structure and a deep honeyed complexity of orange and bergamot peel. Tensions and waves of freshness and minerality help balance the appetizing bitterness of tannins and ripe-dried fruit.

Orange Santameriana triggers explosions in both the nose and mouth. And while the aromas escalate to remind you of peel, bergamot, sweet orange and orange, on the palate you are confronted with intense and heterogeneous elements. It's as if a supercharger has exploded the overall taste experience. The tannins are the perfect wrapping to the oily texture of the wine and together with the acidity and minerality they bring up the freshness. The result is a superbly balanced orange wine without extreme "attitude" and wildness. If you are not a disbeliever in the classic white, rosé or red wines that you usually drink with an orange wine you will have missed a glimpse into the past and for many people the future of winemaking. With its phenolic elements, dense fruit and vibrant acidity it will age as beautifully as a red wine.
