From Romeiko variety and the traditional oxidative Cretan Marouvas we arrived at a modern soft rosé, with amazing fruit and freshness, needs a lot of explanation. However, the Chania red grape has been showing a new face in recent years and is participating in more and more efforts by local producers to evolve new winemaking styles. At the small winery in Endochora, Michalis Tsafarakis produces a softly coloured rosé from the Cretan variety with a spontaneous fermentation, with an amazing texture in the mouth and a play of fruit, acidity and a light appetizing bitterness that lifts it up. From aromas of cranberries, strawberries and cherries along with a spicy, almost savoury note.

Low yields, organic farming and the daily presence and involvement of Michalis Tsafarakis in the vineyard he loves so much are key points in the quality of the wines he produces. Only 1400 bottles are produced from this excellent rosé which is pressed directly as soon as the grapes are broken to get just enough colour. Pre-fermentative maceration at low temperatures for a few hours and alcoholic fermentation is done with indigenous yeasts. Interventions in the small winery, which is anyway only equipped with the basics, are few and the sulphites remain at very low levels. Cool, not terribly complex but extremely enjoyable with pure fresh rather than overripe fruit.
