Riffault Sancerre "Auksinis"

36,50 €

Its name means golden in Lithuanian and refers directly to the deep golden color of Auksinis. Sebastien Riffault produces this shocking mild natural Sancerre vinification from late-harvested grapes that are 50% botrytis-infested (now you know where the color you come across comes from) grown on Sancerre's typical caillottes. As unusual for the area is the color of this Sancerre, so unique is its oxidizing aromatic and tasty character. Notes of baked apple, orange peel, walnut and nuts lead to a palate with a suspicion of tannins, maturity structure but also salty finish.

More info

Patience at all levels for Sebastien Riffault who picks grapes three to four weeks later than the other producers in the area and once the botrytis has started to infect his grapes. About 50% of the grapes are under the influence of the fungus compensating Riffault with richness, volume maturity and taste concentration. All this comes about three years after the harvest and since the wine has spontaneously fermented, it has matured for two years on the wine sludge in stainless steel tanks and for an additional year in old foudres. In the meantime there is no intervention of Riffault on Auskinis which is bottled unfiltered, unsalted and without added sulfites. Mature, rich and with this oxidizing aged dimension of the only producer.
