Evriviadis Slavos does not stop mixing the traditional techniques of Kefalonia, producing his great wines with minimal intervention and from his vineyards full of life that he cultivates with the help of biodynamics. Thiniatiko comes to complement the winery's amazing range of red wines and at the same time revive the classic blend of Kefalonia's red varieties. The Mavrodaphne in about 80% along with the "forgotten" Araklino and Korfiatiko come from a complex vineyard of George Zissimatos (all varieties in the same vineyard) at the innermost point of Argostoli Bay (in Thinaia) and are combined in a wine that combines delicacy, elegance, power and depth of taste. The wine is tight, with pulse and energy in the mouth, although it lacks the monumental structure of Monabeles, tipping the scales more towards finesse.

The harvest for the three varieties is simultaneous with Mavrodaphne at high maturity but Araklino and Korfiatiko at an earlier stage, providing the blend with serious vitality and excellent acidity. A wonderfully balanced wine with moderate volume and elegant tannins with texture that gives a sense of fullness in the mouth without a trace of astringency. The fruit is extremely fresh with some herbal notes, mocha and wet earth. The vinification is non-intrusive as for all the winery's wines, with the three varieties being vinified together in open stainless steel tanks and then matured for 1 year in 500 litre oak barrels. The wine is bottled unfiltered with its sulphites at extremely low levels.
