An approach to Nychteri with absolute respect to the historical past of the wine, a wine that while it has the expected richness, maturity, and generosity that this particular style has historically had, at the same time it is perfectly refined and with excellent focus and precision in its expression. The wine is perfectly dry with the characteristic sharp acidity, reminiscent of a blade, of Santorini but with depth, concentration and power. The new barrel adds more volume to the wine while the wood character manages to balance next to the depth of the fruit and the intensity of the acidity. It's as if the acidity comes in and "erases" everything in its wake, already adding harmony to a wine that is still in the first phase of its youth. The wine is produced with absolutely gentle practices during vinification and is bottled unfiltered and with very low sulphites.

Spyros Chrysos' contemporary perspective on the traditional wine style of Santorini keeps alive the interest in Nychteri, a wine that modern legislation has chosen to treat quite differently from its historical past. Taking as a starting point two excellent vineyard plots in the area of "Loura" in the village of Pyrgos (perhaps the most famous vineyard on the island) and applying biodynamic farming practices, the result is a stunning raw material in both concentration and quality. Unlike his classic Santorini, Nychteri undergoes spontaneous fermentation in new barrel and then ages in it for 7 months with the delicate lees. Next to the wine's concentration and boundless power, the acidity and low pH lead to a mouthful of explosive intensity and vivacity, while the intense minerality blends with the dry-fleshed elements from the barrel. A small "beast" in a cage that will tame and soar in complexity over the years.
