The work of Pierre de Benoist, nephew of Aubert de Villaine, with Aligote is truly captivating and a benchmark for the grape. Bouzeron is the only village in Burgundy that preserves the appellation of origin and its best limestone slopes exclusively for this variety. Domaine de Villaine's Aligote receives the same care as the estate's finest Chardonnays. Which means organic certification in the vineyard and biodynamic practices, leading to minimal intervention and a hands-off approach in the winery. Vinification is done in old oak foudres (high volume barrels) and the mineral dimension of the wine on the nose is enhanced by the excellent lemon fruit. The palate is rich, creamy and round with a lively mouthfeel that makes the wine surprisingly easy to digest and balanced.
