The improvement of cultivation and winemaking were the first steps in the past decade in the production of high quality resins and simply foreshadowed the substantial changes that are taking place at the heart of 1979 Wines, the company of Eleni Kehri. Kallos is the result of scientific research across the entire spectrum covering the production and enjoyment of resin: from the grape and resin, to the production and use of the two key raw materials of wine in its vinification, to the culture of resin as it has been shaped over 7 millennia. Kallos is the first retsina in Greece to be produced from sustainable retsina (retsina is extracted by chopping the tree without any use of chemicals) and is a great Greek wine (we deliberately do not use the word retsina) that shows the way forward. Innovation, sustainability and ongoing scientific research lead to a sensational wine. Phos (denoting the year 2020) is complex, with unique balance, depth, flavor concentration and wonderful evolution that you would expect in all great white wines.
